Pax ‘Verbatim’ Vineyards specialises in the production of Syrah and Viognier. These two varietals have their roots firmly entrenched in the Rhone Valley of France, where vines have been cultivated since the Roman and Gallic eras.

We work closely in conjunction with a handful of select Cape growers whose skill in vineyard practice is of the highest standard.

These grapes are then transported to a private Stellenbosch based winery, where vinification and maturation create the transformation into a fine quality wine of limited availability.

Of bright crimson and ruby colour, this wine offers subtle and perfumed aromas of coffee, mocha and spice. On the palate, an exquisitely balanced, soft and silky texture belies a wine with deceiving yet tremendous depth. Structured, yet deliciously smooth, the senses are treated to flavours reminiscent of black berries, loganberries, and wild plum.
